I get that, it was just something I noticed when looking to build a NAS a few months ago, I was considering the power usage over time when compared with a Synology, and I seem to recall the Synology being much more power efficient, and when I saw OP talking about using a full X86 machine for an AP, I just thought it sounded very inefficient.
Before you start with this project, consider the power use of a full X86 system even at idle and compare that to a standard router.
If you are looking to run this as an access point permanently, the cost of power may add up.
I am not saying that you shouldn’t do it, but take it into account before deciding.

We didn’t effectively administrate the Linux environment, I was the only linux admin at the company, and I wasn’t even doing it full time.
In an ideal world I agree with you, but when resources are limited, running a separate environment is not allways realistic.

IT guy here, if we gave developers the option to exclude whatever the hell they wanted from AV scanning it would just mean that we would end up with computers where the entire C: drive would be excluded.
No, can’t have that.
So what should a decent IT department do to give developers the access they need to do their job while maintaining a decent level of security?
Well, the least bad solution I have worked with was to have a non generic path that was excluded by policy.
Something like C:\Excluded
The directory was excluded from AV scan and allowed in policy, the user could put what they needed there and it would be fine.

If you have a free PCIE slot, you can just get a SATA controller card.
I see other’s talk about an m.2 -> SATA adapter, but I just don’t see the point if you have a free PCIE slot
There are a lot of good things that a smartphone provides that has made my life better.
Weather they apply to you I don’t know.
Here are some great features of my smartphone that had improved my life.
GPS navigation - being able to quickly and easily find your way is amazing. Though I will never have my GPS running with sound, I use it to have a map up when driving where I can glance to see the general idea of the way to my destination, this sometimes mean I miss a turn, but it’s fine the system quickly calculates the route again and I don’t get yelled at to follow directions when it might be impossible, reducing stress.
Smart lighting, my phone can turn on my lights at home before I get home making me able to open my front door into a cozy lit up home rather than a black void.
Translation on the go, being able to get translations of just about anything you need at any point is amazing, sure the translations are not perfect, but they are good enough.
Entertainment is probably to biggest win for me, being able watch a movie, listen to music, read a book where ever you are on a small device you have with you is truly amazing.

To be honest, I don’t really see why the developers/publishers should run the actual mutiplayer servers.
They should only run the master server that lists the multiplayer servers in the server browser.
I am no huge fan of Epic, but they deserve all credit for running the master server for Unreal Tournament 2004 multiplayer for almost two decades.
And when it shut down, fans had made their own master server that was ready before the main server went down, you just had to modify the ut2004.ini file with the new master server and it just worked.
It felt more like Epic passed the torch than shut down a service.
Any smart feature must be optional.
I have smart lights at home, none is required to get light in the rooms, they are only used for mood lighting.
