I’ve used LCom in the past when I need something in a harness, that I didn’t want to ever have to replace. They have a 3m 20gbps 100w cable for about $20. I’ve never used their USB c cables though.

A max10 FPGA runs pretty cheap, and to do what you want, the free version of quartus will do just fine.
Does the LCD happen to have a dev board or reference design you can use to see what they suggest?
Alternatively, it’s worth figuring out if the wiring is standard for the LCD, some microprocessors have display out peripherals that will do all that work for you. For instance, the STM32F429 has a display controller. (There are others, I’m bad at searching from my phone)

Using multiple ports isn’t really an option, because all the ground (0v) lines on a USB power Bank will be tied together, so stacking them would only prove to short+V to Gnd. If you had multiple power banks, and did not tie the chassis lines together (because those are also often shorted to 0V), maybe this would work it likely depends on the adapters used, but that would involve you traveling with a power strip, 4 adapters and the monster cable.
