Eu já usei o linux mint e toda a gente aconselha o mesmo para pessoas novas em linux. Portanto, diria que o linux mint xfce é o melhor para o teu caso, já que apenas desejas escrever textos e afins.
Em relação à impressora não sei mesmo como ajudar.
